Heat oil in a pan. Add cumin seeds,ginger garlic and onion paste and sauté till golden brown.
Add chopped tomatoes,Rainbow Garam Masala, turmeric powder, chilli powder and sauté till the oil separates.
Add boiled mixed vegetables, salt and stir. Cover and cook on low heat . Garnish with coriander and serve hot with rotis/parathas.
Add Rainbow Garam Masala while preparing samosa, potato wada, patra, stuffed parathas, etc. to enhance the taste.
